Ingredients  

  • Half cup melted coconut oil
  • Half cup natural creamy peanut butter or almond butter
  • Half a cup of coconut sugar
  • One-fourth cup of cocoa powder
  • 0ne -fourth cup unsweetened vanilla almond milk
  • pinch of sea salt
  • one teaspoon of pure vanilla extract
  • three cups of instant oats

Instructions:

  • Stir the liquefied coconut oil and peanut butter in a medium mixing bowl per the instructions. Vanilla, coconut sugar, cocoa powder, and almond milk should be added.
  • If desirable, the coconut sugar can be completely dissolved in the peanut butter cocoa mixture over medium-low heat on the stovetop for 5 to 6 minutes. There are times when I perform this action and times when I do not. It depends on the amount of time available to me.
  • Combine oats with the peanut butter cocoa mixture in a large mixing basin. Stir until thoroughly incorporated.
  • Spherical to medium in size, transfer the dough to ng sheet lined with parchment paper. Shape the dough into individual cookies by applying slight pressure to the dough with your palms.
  • Refrigerate the baking sheet while the biscuits harden, then serve. Any leftover biscuits can be refrigerated in an airtight container for one to two weeks.

Notes:

No Oil Version:  I have prepared this recipe with pureed banana instead of coconut oil. Although the biscuits will be slightly drier without coconut oil, they will still be delicious.

Sugar: Although granulated sugar may be substituted for coconut sugar, it is imperative to heat the peanut butter cocoa mixture to facilitate the dissolution of the sugar.
